After being out all night, these were put in a turned off, warm oven for about an hour. They became taller, a little more length, and jiggle when the tray is moved.

Proofing Instructions: 6 frozen croissants evenly spread on a parchment lined cookie sheet. At a room temperature of 20c, leave out on counter for 8 hours overnight. By morning they should triple in size to about 12cm long by 5 cm high, & wobble like jello when tray is moved. If they are not proofed enough, turn on your empty oven briefly, and turn it off when you feel light warmth on your hand. Place tray in oven for 1 hour to finish proofing.
Baking Instructions: preheat empty convection oven to 375. Brush with egg wash (1 egg, 3tbs water mixed). Bake for 13 minutes, rotate tray and bake 10 more minutes. Oven times will vary so use best judgment. If using a non-convection oven, results will vary and baking times should be based on your judgment. Overall, you are looking for golden brown.
